Just try to stop them! We put them into a plastic trash can sunk to its rim in the garden, to contain their tendency to roam. If you do that, once they’re established, you’ll want to harvest roots regularly, or they will cement themselves into an impenetrable mass of rhizomes that you’ll have to chop out with an axe. Also, nota bene, though J. artichokes are edible uncooked, and make a crunchy addition to salads, they are shockingly gassy. A few, uncooked, are a delight. More than a few are a biohazard.
