I was looking for a soup with Parsnips and Kale, since that's what I have in the fridge right now in the middle of this ontario winter. Ok, the kale is from the U.S. Never mind, the parsnips are local and we eschew dairy in my house. But all of our soy and rice milks are vanilla flavoured! Not sure if that will work...So, inspired by your writing, and some of the suggestions from other readers, I'm going to try the soup with coconut milk. Wish me luck. Looking forward to your other posts.

Well, hello! Thanks for coming by for a visit. I've shamelessly just spent 30 minutes of my workday cruising around your site. As much as I'd like to continue through the archives, I need to stop here, add you to my reader, and pick this back up later. I love your writing and your recipes - just lovely! I've decided that this soup will be first up on my list to try.

I, too, consider the idea of veganism from time to time, but for now have settled on trying to be dairy conscious as much as possible. Soy and almond milk is where my experience ends, so I am excited about doing some cooking with rice milk.

We vegans have plenty of options! I must say, though, that yogurt is one of the things I really miss (and so does my digestive system). Vegan substitutes offer the bacteria but not the taste or texture. D:

I loved your post and the background you provided with it. After StumblingUpon you, I'm bookmarking!

Mmm, kale...this looks delicious! I'm also way too much of a yogurt-lover to take the vegan plunge, but I like coconut milk for vegan soups when the flavor is appropriate--really rich and decadent, a good stand-in for heavy cream.
